While it doesn't specifically show different variations, it could be a more hidden or nuanced feature that only happens during certain matches. Dynamic stages could make each subsequent match more exciting and varied.

Patrick Star and Oblina are shown in the trailer making some silly moves at the camera or other characters which might lead to the possibility of various taunts to equip to use in-match. While character taunts don't really do much to alter gameplay, they do at least provide a fun and lighthearted way to express yourself in a multiplayer match.
Lastly, Pat here's Tweet about the lobby system of All-Stars Brawl is another in-joke for fighting game fans. Of course, even a casual fighting game player could piece this joke together, but the audience who has played games made by Arc System Works like Dragon Ball FigherZ or Guilty Gear Strive with weird lobby systems will understand this joke on a deeper level.
